Comfort Food and Weekly Goal Updates

Last week was a comfort food sort of week. Because 1) I was wishing it still felt like Fall and 2) we all came down with the cold yuckies....(yes, even though it didn't feel like Fall! What's up with that?).

On Wednesday I made Crockpot Chicken and Dumplings as planned...and wow! It did not disappoint. I have been looking for a good chicken and dumplings recipe, and this one from Merry With Children delivered. It will definitely be made in my kitchen again. The dumplings were perfect, and the meal was so easy to put together. I used low sodium chicken broth, omitted the mushrooms, and adjusted the cooking time for my crockpot (which cooks super fast).

Due to how awful we felt on Saturday, I changed the menu plan up, and Andrew and I put together a big pot of chili--my momma's recipe. Very good decision. Try this chili! You won't regret it.

Our menu plan for this week is a little more back-to-normal:

Breakfasts: Oatmeal, French Toast, Cream of Wheat, Eggs, Cold Cereal
Lunches: Leftovers, Sandwiches

Dinners:
Monday--Penne a la Betsie (another PW pasta recipe, because last week's was a hit!)
Tuesday--Bean and Rice Burritos (will make extra to freeze)
Wednesday--Baked Flounder with Brown Rice and Spinach
Thursday--Split Pea Soup with Sausage
Friday--Pizza Night
Saturday--Grilled Chicken (using this marinade) with whichever veggies are lingering at the end of the week (we keep missing this meal, so I've rolled it over for the 3rd week in a row!)
Sunday--Leftovers

Next up, weekly goals. I am trying to make these goals prayerfully each week, and be ready to drop some of them if God puts something more important in my lap. However, these are making such a difference in my week. I'm particularly happy that it's helping me carve out some time for reading, which I think is crucial to learning and growing as a wife/mom/daughter of God.

Here's how I did with last week's goals: 
  • Read 2 1/2 chapters of The Mission of Motherhood. Done! This is an encouraging book so far.
  • Exercise at least 3 times. I exercised twice. The second time, I injured my left leg and had to take a break for the rest of the week. It feels better now, so I'm going to try again this week (while being careful!!).
  • Organize bedroom desk. We organized like CRAZY this week. More on that later!
  • Make one busy bag. Done. I made this one!
  • Read with Squishy once a day. Since we are pre-potty training, we did quite a bit of reading while he sat on his little potty.
  • Finish organizing the kitchen cabinets. I have one more to go!
  • Have a family photo shoot. Not yet. Since we were all sick over the weekend, we weren't feeling very photogenic. Especially since when I'm both pregnant and sick I get kind of weepy at nothing. Yeah.
Ok, on to this week:
  • Read 2 chapters of The Mission of Motherhood.
  • Exercise 3 times (notice how I took the "at least" out! Ha!)
  • Have a family photo shoot.
  • Send care package to friend.
  • Write a letter to Immaculate.
  • Organize last kitchen cabinet.
  • Marriage goal: Pray daily for my husband. (Typically, I keep most goals related to my marriage private, just 'cause. But I thought this may encourage us all to pray for our hubbies. I realize that sometimes I go days without praying for Andrew, which is crazy. This is a HUGE way that I can love and support him.)

  1. I *loved* having a list of goals last week!! And I managed to do pretty well with them, too! I posted a new goal list for this week on my blog (just this morning). I like your goal of sending a care package... that's a great idea! I might steal it :) And you're right about praying for our husbands. Praying for Daniel is not something that is always at the front of my mind, so thanks for the reminder!

  2. Alicia, I found your blog when re-introducing myself to homemade yogurt making. I made yogurt four my daughters when they were little (now 29 & 25) and now my grandsons are enjoying my results. I've had great success with the crock-pot method (though my DH complains about cleaning it since milk protein is one of the tough ones to clean) and it is so forgiving. My grand-baby boys love the vanilla sweetened with raw sugar. I don't even make a simple syrup, just dissolve 1/2 to 3/4 cup for 2 qts. milk in the warm milk before adding starter yogurt.
    I was a stay at home mother and am blessed to see young women (including one of my girls) make that choice when at all possible. We didn't have much, but we always had our needs met.
