To keep life sane, I've also put together a menu plan for February's dinners. Today I'll do some freezer cooking, mostly during naptime.

As I'm getting back in the swing of freezer cooking, every month I'm tweaking my list of "favorite" freezer cooking recipes. More on that later!
This month, I'm trying the following *new* recipes:
Stuffed Pasta Shells (carried over from last month, because I never ended up making it)
Thai Coconut Soup
Quick Crustless Quiche (we love this quiche, but I've never tried to freeze it before)
Chicken Pot Pie (The Pioneer Woman's recipe, so I feel confident about this one!)
I'll let ya know how it goes. :)

P.S. And no, I don't plan on using all 5 pounds of cheese in my cooking this month!

So, in your plan, you leave no spots for leftovers. Do you both eat leftovers for lunch so that there are none for dinner? I always end up with so many leftovers!!!

ReplyDeleteKathy, we do normally eat leftovers for lunch, although we sometimes do have them for dinner again. I just like to have a meal designated for each night and make sure I have the ingredients on hand...if we decide to eat leftovers instead, no problem! Also, we like to invite our neighbors over for dinner at the spur of the moment, which often means no leftovers. :)

ReplyDeleteAlicia, I did my FIRST freezer cooking day last Saturday (thanks to your inspiration!) and I'm loving having some meals already prepped to cut down on the evening craziness!!!

Was so sorry to hear about your grandfather. I admire you. You have been through a lot in the past few weeks and you seem to be going as strong as ever. You are a real trooper!You have so many great tips but I will have to say your meal planning is awesome!
