Menu Plan Monday--Loving Summer Produce!

Here's a new week! Today is Andrew's first day of classes, and it's already been a busy morning for me.

Did I mention already how much I am loving summer produce? I bought the pictured produce at our small local grocery store for $10. And yes, that's 10 lbs of potatoes, so it's time to get busy!

I also went to Publix and purchased lettuce, green beans, mangos, corn, and cilantro. It's going to be a yummy week!

I am doing a spread-out version of freezer cooking this week--doing a little bit of freezer cooking each day (with a good bit done on Tuesday). Here's what I want to accomplish:

Homemade yogurt
Pumpkin Chocolate Chip Cookies (a no-egg recipe for my Indian neighbor)
Pumpkin cake (with the leftover pumpkin)
Banana Bread (using up the ripe bananas I found on sale)
Lazy Granola
Taco Soup Burritos (I'm tweeking Tricia's Taco Soup recipe and adding uncooked rice to absorb the liquid and make a burrito filling)
Black Bean and Mango Chicken Salad
And then POTATOES. Remember Toni's awesome post about bulk cooking potatoes? I'm going to be trying some of those recipes.

Here's hoping I have room in my freezer! I think I'm probably a little overambitious, so we'll see what I get accomplished. :D

With that said, here is my menu plan for this week:

Breakfasts: Banana Bread, eggs, smoothies, cold cereal, yogurt with granola
Lunches: leftovers (including Stuffed Buffalo Chicken and Spaghetti), salads, tuna fish sandwiches on honey wheat bread
Snacks: peaches, kiwis, granola

Dinners by weeknight:
Monday--Taco Soup Burritos with lettuce, salsa, sour cream
Tuesday--Sue Sue's Casserole (from the freezer...must make room!) with broccoli
Wednesday--Black Bean and Mango Chicken Salad wraps *love*
Thursday--Zucchini Parmesan with garlic bread and green beans
Friday--Pizza night! With salad

  1. Looks yummy! Our garden is bursting with blossoms and tiny veggies - can't wait until we're able to eat our goodies fresh from the back yard (your zucchini parm makes my mouth water!).

  2. What a delicious looking menu!! Really, you had me at mango and cilantro. I am trying to spend my entire summer planning menus around fresh veggies and locally grown foods, so I really appreciate the ideas here.

  3. Yummy. I need to do some freezer cooking, but I definitely DON'T have room in my freezer. At least I could make some yogurt...when I buy milk!

  5. @Tifani: Seriously, I love mango and cilantro! That plus the red pepper and grilled chicken make the black bean and mango chicken salad sooooooo good. :D
    @Betty Crapper: we like to put tomato slices and spinach on our pizza. And I have some pesto hanging around, so I might make a chicken pesto pizza.

  15. Love the sound of the buffalo chicken. Anything with buffalo sauce will make it onto my menu.

    I'm actually escaping this entire week without cooking and going to upstate NY to see my family. Lots to do when I get back though since I'm working 3 twelves in a row!

  17. Sheena, I did make them! They are good. I wouldn't say they are the best cookies I've ever had, but hey--it's hard to go wrong with a cookie! If you make them let me know what you think.
