Freezer Breakfast Burritos

I've been on a quest to find some delicious and filling made-ahead breakfast items (maybe you've seen my inquiries on facebook and twitter). My husband leaves for class early in the morning (before baby is awake!), so the less clanking around in the kitchen, the better.

Jess from Vanderbilt Wife said that she makes breakfast burritos and freezes them for a quick breakfast.

So here's what I tried!

To make these yourself, you'll need your favorite scrambled eggs ingredients and some tortillas. I used:

1 dozen eggs
1/4 cup milk
1/2 lb sausage, cooked and diced
1 tomato, diced
2 cups sharp cheddar cheese
Salt and pepper to taste

Scramble the eggs to your liking (pictures of scrambled eggs always do them injustice):

Prior to assembling your burritos, warm your tortillas slightly so that they are easier to shape into burritos. Then add a dollop of eggs on top of your shell:
Sprinkle some extra cheese on!

Then fold the ends over about an inch.

And then the next side.

And the next:

A dozen scrambled eggs gave me 9 breakfast burritos.

To freeze, wrap them individually in clear wrap or aluminum foil and then put in a freezer bag. Reheat by removing wrapping, wrapping in a paper towel, and heating it in the microwave for approximately 2 minutes (depending on your microwave). This is what you'll get:

Yum! My husband enjoyed one this morning for breakfast on his way out the door.

  5. I made something similar once for my husband and he said they were "too soggy". He also is the pickiest eater on the planet. These ones don't look like the tortilla got very soggy at all when cooking. I will have to try this.
