In Which I Do Not Feel Like Menu Planning...

I got sick over the weekend and woke up Sunday morning with that I-must-have-been-hit-by-a-freight-train sort of feeling.

Which translates into not wanting to plan a menu for this week. However, since I know that those 10-15 minutes spent planning out our meals will make such a difference in my week, I bit the bullet (AFTER taking a two hour nap).

Here's what I came up with. Keep in mind, if I happen to not be feeling well, that any or all of these meals may be substituted with spaghetti and or cold cereal. But we'll hope for the best. I stuck 2 crock-pot meals in the mix for good measure.

Breakfasts: Homemade Yogurt (I plan on making a big batch after I buy more honey), cold cereal, granola, smoothies, Blueberry Zucchini Bread (just pulled a loaf out of the freezer!)
Lunches: leftovers, salads
Dinners:
Monday--"Awesome" Stew with yellow rice
Tuesday--Spinach and Feta Pizza with salad (the pizza dough is already in the freezer).
Wednesday--Dinner at a friend's house
Thursday--Sticky Chicken (crockpot!) with Memaw's Green Beans and Mashed Potatoes (the mashed potatoes are from the freezer).
Friday--Baked Ziti with Spicy Sausage, garlic bread, and carrots
Saturday--Crockpot Chicken and Brown Rice Casserole with Broccoli

  2. :( Feel better! I'm still impressed, though. If I felt like that, my menu planning would be telling my husband to buy some frozen pizzas.

  3. Oh no hope your feeling better, maybe a couple days rest and no shredding is all you need.

    So glad your enjoying the sticky chicken, maybe some homemade chicken noodle soup is what you need, but get hubby to make it.

  5. Every time I catch a cold or am somehow under the weather I am reminded how important freezer meals (or prep) and the crockpot are to SAHMs.

    Jenna, I had a bowl of sticky chicken broth yesterday evening for dinner! :)

    Sheena, don't worry! Even us chickens can conquer homemade yogurt. Give it a shot. :D

  7. Do feel better soon! It's hard trying to run a home when you are feeling like pooh, so remember to rest up. If everyone has to eat cold spaghetti, so be it! and yes, to Shell, this is one of those times where you just really need prepared frozen foods in the freezer. *smacking head at why I HAVE NOT DONE THIS YET!!!*

  9. Looks Yummy. Hope you feel better. Isn't it nice to lean on the crock pot to help out with the "heavy lifting" of supper preparation when you are not feeling 100%?

  10. Looks like you tried to plan a good menu - some freezer items and things that maybe don't need a lot of at the stovetop time. But I agree that when I don't menu plan my week is always a disaster. Good luck and hope you feel better
