Back to Normal Menu Planning

Here at home, I'm trying to get back into the swing of menu planning. After 3+ months of morning sickness, I haven't quite planned enough to tackle a freezer cooking session or a monthly meal plan, but the weekly plans are back. Sarah from Loved Like The Church inspired me with her crafty dry erase board, and last week I made one myself for our weekly menu!

So easy to make...our new menu board is sitting on the table momentarily, until I put up a hook for mounting it on the wall. For now, it makes our kitchen table look like a little corner in a cafe. :) Have I mentioned that in the last few weeks I have been nesting like crazy? All I want to do is purge, make lovely crafty things, and organize. My hubby is considering nailing his belongings down (not really, but I do love to purge!).

Organic tomatoes on markdown = fresh salsa this week!

But back to meals...I missed our local grocery store while we were gone and now I'm back to shopping there for most of our produce and meat. Today I found these organic tomatoes on markdown, so I think we have fresh salsa in our future. Ooooh-la-la.

Here's what the week should look like meal-wise:

Breakfasts: Cold Cereal, Cream of Wheat, Oatmeal, Eggs, Toast.
Lunches: Leftovers, sandwiches

Dinners:
Monday--Taco Salad with fresh salsa (taco meat recipe here).
Tuesday--Chuck Roast with Carrots (anyone have a fabulous crockpot recipe?)
Wednesday--Crustless Quiche with Spinach
Thursday--Leftovers
Friday--Pizza Night with Salad
Saturday--Chicken Broccoli Stir-Fry (some variation of this stir-fry recipe)
Sunday--Steaks on the grill, sweet potatoes

Maybe I'll have a mini freezer cooking session and make some batches of pizza dough and taco meat early this week. :)

In other news, I think the July/August Florida heat has finally done our garden in. I'm starting to think about seedlings for a Fall garden, but I think I'm going to keep it small and maybe try growing more flowers. What are your favorite veggies or flowers to plant in a Fall garden?

  1. My easy roast recipe:

    Place frozen roast in crockpot.
    Sprinkle one pkg. of onion soup mix on top of roast.
    Add one onion, chopped.(opt.)
    Close lid and cook on low for 8-10 hrs.
    Enjoy :)

  2. Oh it must be nice to be able to have a fall garden. Although sad that the head did in your summer one. Your menu board is really nice and those tomatoes look yummy.

  3. I just saw a menu board on another blog. They used a picture frame and then used dry erase markers to write on the glass. Smart ideas! As for your roast, are you planning to use leftovers as something else? If so, I'd make sure the seasonings will pair well. We usually make tacos with leftover roast. But I did make a beef stew with leftovers once. I just season it with those Steak Seasoning grinders we got free from Publix last year. Sear all the sides in a hot pan. Put it in a crockpot and let it roast. I don't add water, but if you are concerned about it overheating or something, you can always add beef stock or chicken stock. Now, I'm craving roast! :)

    I've never done a fall garden, that wasn't an option in Iowa. However, I hear that lettuce does really well in the South during the fall, because it likes cooler weather. Also, squash. Butternut especially. I love butternut squash.

  8. Way to go on the menu board it's so cute! The menu looks good too. I'm sure you're so glad to be on it again. But, think your reason for the break is pretty valid :)

  9. I can relate to the nesting urge, though purging does not come naturally to me. We're actually getting ready to welcome a surprise blessing in late January/ early February. So although I'm sending my current youngest to preschool this fall, we'll be getting ready to embrace "baby blueberry" as the new year begins!

    Meanwhile, I'm hoping to plant the lettuce seeds that I never got around to sowing in the spring. The weather is already cooling off here. School starts tomorrow!
