Menu Plan Monday--May 17th

Happy Monday!

Here's what's going to be on the table this week at our house:

Breakfasts: smoothies, english muffins (I'm dying to make some homemade ones, but not sure if I'll get to it), cereal, eggs
Lunches: leftovers, sandwiches on Honey Wheat Bread, Black Bean and Mango Chicken Salad from OAMM Summer Menu (pictured).

Dinners by weekday:
Monday--Sue Sue's Casserole, garlic mashed potatoes (carried over from last week)
Tuesday--Mexican Chili Chicken with peppers and rice
Wednesday--Grilled Chicken Pesto Wraps (OAMM Summer Menu). I am doubling this recipe and sticking the other half in the freezer. 
Thursday--Pizza and Salad night
Friday--Dinner at a friend's wedding

Tricia's once a month menu for this summer is really impressing me so far--every recipe I've made from it has been wonderful.

I'm very eager to post a picture tutorial for making the fabulous honey wheat bread, but the pictures are on my computer that's being worked on. Coming soon! I went ahead and posted the link for the recipe--it is sooooooooo good.

  1. Love the ideas here! I am going to try to make a dessert this week--Ginger peach ice cream sandwiches. Usually I'm just trying to get the main meal on the table, with no time to bother with dessert. But making something special on one day shouldn't be too overwhelming, right?

  2. Yeah, that sounds great! Dessert hasn't been happening much around here lately...I miss it! Would love to know your recipe for the ice cream sandwiches (do Ginger and peach go well together?)...
