Chipotle Chicken with Peppers

This dish is often eaten at our house. We love its spicy flavor, and I appreciate how easy it is to make. Chop up your peppers/onions, toss the rest of the ingredients in, and turn on your crockpot! There is one extra step at the end, but even that doesn't take long.

Consider yourself duly warned--this dish does have some kick to it! If you can't handle that, decrease the amount of chili pepper it calls for.

Chipotle Chicken With Peppers

Ingredients:
2 medium green bell peppers, cut into strips
1 large onion, thinly sliced
4 chicken thighs and 4 chicken drumsticks (or any combination thereof..I just fit as much chicken as I can in one layer in my crockpot)
1 TBSP chili powder
2 tsp dried oregano
1 jar (16 oz) chipotle salsa
1/2 cup ketchup
2 tsp ground cumin
1/2 tsp salt
Rice or noodles to go along

Place the peppers in onion in your crockpot. Then add the chicken. Sprinkle the chicken with the chili powder and oregano. Then cover it with chipotle salsa. Cook on high for 2-3 hours or on low for 7-8 hours until the chicken is cooked through. Remove chicken from crockpot, leaving the sauce. Add the ketchup, cumin, and salt to the sauce and cook on high for 15 minutes, uncovered. Pour sauce over chicken. Serve over rice (my fav) or noodles.

This recipe is perfect for using any frozen chicken/green peppers/or onions that you have on hand. I typically toss these items in the crockpot still frozen and have found that it doesn't adversely affect the flavor/texture of the finished dish.

A note on chipotle salsa: the cheapest place I have been able to find this is at Winn-Dixie ($2/jar for the Winn-Dixie brand). The only brand sold at my Publix is around $4/jar. I am hoping to make some of my own chipotle salsa in the future, so I'll let you know how that goes!

  5. Not to worry, my family likes it hot. This sounds so easy. I know that my post today from a vintage recipe may sound a little strange, fried devilled eggs, but it really is quite tasty. It might go well with chipotles.
