Menu Plan Monday--What You MUST Do With Your Peaches

My local grocery store has Georgia peaches on sale for $.69/lb this week, so my mission this past weekend was to make peach cobbler. I asked around on twitter, and Crystal from A Well Feathered Nest recommended
Paula Dean's Peach Cobbler Recipe.

Oh. My. Goodness. 

It was amazing. It's true Southern sugary buttery goodness and one of the highlights of our weekend. And also one of the reasons I was inspired to go running this morning.

We had several departures from our menu plan last week (pictured are a few of the things we enjoyed--Vegetable Pasta Primavera, the Peach Cobbler, Mango Sticky Rice, and Homemade Yogurt), which means I still have the Blueberry Zucchini Bread to make. The Mango Sticky Rice was awesome--recipe coming tomorrow!


Here's the plan for this week:
Breakfasts: smoothies, cold cereal, blueberry zucchini bread, homemade yogurt
Lunches: Sandwiches, leftovers

Dinners by Weeknight:
Monday: Date night!
Tuesday: Steak fajitas with guacamole and salad
Wednesday: Tuscan Beef Stew in the crockpot with Mashed Potatoes on the side
Thursday: Dinner at home group
Friday: Sushi night! I've never made sushi before and I'm sooooo excited to try. Are any of you expert sushi makers?

  2. Peaches are one of my favourite things about summer so your post title definitely grabbed my attention :) That cobbler looks great! We had Peach Clafouti for dessert last night and it's another easy and fabulous dessert that works well with most summer fruits. I'm going to be sharing my recipe on my blog tomorrow!!

  4. Several years ago, I picked peaches, and I made a peach cobbler - it was absolutely To Die For! My son was away for most of the summer, though, so it was just me at home. . . I was eating that cobbler every night for dessert, packing a dish of it for lunches, and even eating it for breakfast! Hey, it was BISCUITS and FRUIT - how can it NOT be breakfast, right?

    Fresh, in-season fruit is just the BEST, isn't it?

  6. @Moderate Means: The Tuscan Beef Stew is a new recipe I'm trying this week, so I can't vouch for how good it is yet! However, if you want to try it with me, the recipe is as follows:

    Tuscan Beef Stew
    1 can tomato soup
    1 can condensed beef broth
    1/2 cup red wine or water
    2 lbs beef stew meat, cut into 1 in. pieces
    1 can diced Italian-style tomatoes
    3 large carrots, cut into 1 inc pieces
    1 tsp. Italian seasoning, crushed
    1/2 tsp. Garlic powder
    2 cans (16 oz each) white kidney beans, drained

    Mix all ingredients except beans into crockpot and cook on low for 8-9 hours or on high for 4-5 hours. Stir in beans and cook for 10 min on HIGH.

    I'll let you know how it turns out!

  7. I love that recipe for peach cobbler. I've been making it for years and it's always a big hit!!! I also make crockpot yogurt regularly and love it! You have some good recipes this week! :)

  9. @Natalia: Yes, I post my menu plan every Monday. I normally sit down to think about the next week's menu on either Saturday or Sunday. I look at the sales for that week and plan which recipes to do and then I go grocery shopping on either Sunday or Monday. It definitely helps the 4-5 pm "Oh-my-what-will-I-serve-for-dinner" predicament!

  10. Wow - we were planning on having a sushi dinner night on Friday - but have not yet figured out what to make - what are you planning on starting with? Did you find a good recipe site or will you just be trying to duplicate your favorites? Let me know...

  11. I'm not an expert sushi maker, but it is a lot of fun. My tip - don't use too much rice or your roll will get too fat!

  13. @Eva: I haven't looked for a sushi recipe site yet, but I have instructions on making the rice from my friend Rachel. I think I'm going to start with a imitation crab/avacado/cream cheese/cucumber type roll, and move on from there. I'd rather do fresh sushi grade fish than imitation crab, but I'm going for the frugal version here.

  14. We've always used a similar cobbler recipe based on the cuppa-cuppa-cuppa recipe they talk about in the movie Steel Magnolias! As for the sushi, I agree with Food on the Table. Watch the amount of rice. And if you don't already have one of those bamboo rolling mats, grab one. I thought they really helped.
