Menu Plan Monday--The No-Plan Edition

That's right. My menu plan this week is to have no plan.

We are spending the entire week at my parents house and at the beach. Hurrah! I am looking forward to it more than I can say--a relaxing time together with family before what is said to be the most stressful, jam-packed semester in my husband's program.

Of course I'll help my mom out with the cooking/dishes, etc...but somehow that's much more fun than doing it at my own house. :D My mom and I have always agreed that somehow dishes are not nearly as hard to do when you have a change of scenery.

Lunch salad, Homemade Peach Pie, Chicken Pot Pie, and Chipotle Salsa
Our meals this week were mostly yummy favorites, with a few special tweaks, such as the peach pie I made using freezer peach pie filling and the have-your-hubby-cook night. I also attempted homemade chipotle salsa for my Chipotle Chicken with Peppers. And wowsa, somewhere I missed the memo that chipotle peppers are really hot. I added one large one to the salsa and then had to send my hubby out to buy more tomatoes and onions to help dilute the ultra-spicy result. The upside of that? Two more jars of salsa in my freezer for later. I will divulge my recipe at a later date...

Meanwhile, stay tuned for my perfected version of Blueberry Zucchini Bread, which will be posted later on today!

One last note. Have you noticed how much I have posted about food lately? Cooking is becoming more and more of a fun hobby/creative outlet for me, which is nice since it's such a huge part of my job as a SAHM. I have to tell myself to stop cooking so that I can get other things done. A huge change from a year ago! Now if only I could find someone who wants to wash all the dirty dishes....

    I love cooking...not that I'm any good at it, but we love to try new recipes. And baking too!! So excited for the holidays so we can bake more. Hopefully, for others more than ourselves...I do have to test a few though. =p
