Try New Adventures Thursday: Making Real Chinese Dumplings

Last week my sweet neighbor kindly offered to teach me how to make real Chinese dumplings (have you ever had them?). I have eaten them on numerous occasions--always made from scratch--and I love them.

Here's a peak into the process!


Li and Juheng make the dumpling dough by mixing together bread flour and water (approx 1 cup water per 3 cups of flour) and then kneading it until smooth. Then Li used the pastry machine to press out the dough (but you can use a rolling pin as well). Then the dough is cut into thin circles approximately 3 inches in diameter.

The filling we used was half ground veal and half green onion (plus some added salt). We also had a filling of ground turkey with chopped up celery.

Place a dollop of filling in the middle of the dumpling and press the middle together. Fold the ends in and then pinch them together. Then seal the rest of the dumpling.

To cook them, we placed the dumplings gently in a pot of boiling water and stirred carefully. Wait until the water returns to a boil and then add approx 1 1/2 cups of cool water to the pot. Repeat this process 2 more times, and then remove the dumplings from the boiling water.

Serve with soy sauce mixed with red wine vinegar (or just soy sauce if you prefer). Don't forget your chopsticks!

    These sound like something that even I could make. The added bonus is that they are not deep fried or some such thing that a quickly pushing 50 mom should not be eating.

  11. LOVE your adventures! My son is a big fan of these dumplings but I've never made them myself. I almost wouldn't want him to know I could because he'd ask me all the time. But it's good to know about this post just in case.

  12. YUM! I love authentic Chinese food (perhaps stemming from 6 weeks in Beijing in 2002). It's nearly impossible to find here. Drooling over dumplings ... I need some Chinese neighbors!!
