My Momma's Chili

Fall Comfort Food

This recipe says "comfort food" to me. Flavorful chili served over rice and topped with cheddar cheese....and maybe a dollop of sour cream! This is my mom's tried-and-true recipe (which I always double). Also excellent served with cornbread or tortilla chips.
My Momma's Chili

1 1/2 lbs ground beef
1 cup chopped onion
1 cup chopped green pepper
1 clove garlic, minced
1 (28 oz) can whole tomatoes, undrained and chopped (you can also use diced tomatoes...they just have a little less juice typically)
1 (16 oz) can light red kidney beans, undrained
1 1/2 TBSP chili powder (This adds flavor, but this chili is not on the spicy end. Add more chili powder if you like it hot!)
1 tsp salt
1 tsp ground cumin
1/2 tsp pepper
Rice and cheddar cheese to go along

Brown ground beef with onion and pepper. Drain excess grease. Add other ingredients. Cover and simmer on low heat. Serve with whatever you prefer: rice and cheese, sour cream, corn bread, etc. :)

Last week I doubled the recipe and it fed 4 adults for dinner, with leftovers to spare for at least 8+ lunches during the week.

    I love how versatile the ways to serve chili are throughout the US.

    In Texas the only thing we might do to chili is top it with cheese and maybe crumble cornbread over or under it ;-)

  4. Yum, yum, yum, yum! I'm making chili for dinner tonight so I will use this recipe! Have you ever served it over macaroni? We usually do it with rice, but I've had it with e macaroni before and it was delicious.

    Rachel, I know, I know. Some people look at me so weird when I tell them I serve chili over rice! But that's what I grew up with, and I LOVE it--even better than cornbread.
