Easy-Peasy Chicken Cacciatore

Chicken Cacciatore--a.k.a. The Easiest Freezer Meal Ever!
This dish combines two of my favorite things: a quick sauce-veggie-meat freezer ensemble and the crockpot. In other words, to make this recipe ahead of time, all you do is toss the ingredients together in a freezer bag. Then, on the day you plan to eat it, just plop the ingredients in your crockpot! I love it.

This particular Chicken Cacciatore is very similar to our beloved Chipotle Chicken with Peppers, only without the spice.

Chicken Cacciatore
Adapted from a recipe found in the Winning Slow Cooker Recipes Rival Crockpot Cookbook.

1 1/2 lbs chicken (I use chicken quarters)
1 jar red pasta sauce (1 lb 10 oz size)
1 green bell pepper, sliced
1 onion, sliced
3 TBSP chicken broth
1/2 TSP garlic powder
2 cloves minced garlic
1/4 tsp ground black pepper

Place chicken in crockpot. Add other ingredients. Cook on low for 6 hours, or until chicken is cooked through (my crockpot tends to cook faster than some!). Serve over rice.

To make ahead: place all ingredients in a gallon-sized freezer bag and freeze. Thaw overnight in your fridge before cooking (you may add the frozen ingredients to your crockpot once they are thawed enough to come out of the bag--simply increase the cooking time!).

  8. I love chicken cacciatore! I serve it over orzo a lot of times.

    Another way to do it, if you want it faster than the crockpot, you can do it in the pressure cooker super fast and get that same long-simmered flavor. Delish!
