February's Meal Plan (and Freezer Cooking Prep!)

Yesterday's freezer cooking prep: Shredding 5 lbs of cheese!
We're a week into February already (WOW). I've been catching up on laundry and sleep and nursing my two boys back to health (they both contracted the stomach flu).

To keep life sane, I've also put together a menu plan for February's dinners. Today I'll do some freezer cooking, mostly during naptime.

Feb 1st (out of town) Dinner on the road Can't remember what we ate. ;) Leftovers Dinner Out
Creamy Mac and Cheese w/Mixed Veggies Quick Crustless Quiche Cheddar Cheese Soup/ Butterhorn Rolls Loaded Nachos Chicken Cacciatore with Rice/ Carrots Date Night Baked Tilapia/ Broccoli
Stuffed Pasta Shells/ Green Beans/ Garlic Bread Sushi Thai Coconut Soup/ Butterhorn Rolls Burritos Chicken Pot Pie/ Roasted Asparagus Pizza Night Steak/ Sweet Potatoes/ Salad
Chicken Spaghetti/ Mixed Veggies Quick Crustless Quiche Cheddar Cheese Soup/ Butterhorn Rolls Taco Salad Sushi Pizza Night Parmesan Tilapia/ Broccoli
Stuffed Pasta Shells/ Green Beans/ Garlic Bread Chicken Pot Pie/ Corn

As I'm getting back in the swing of freezer cooking, every month I'm tweaking my list of "favorite" freezer cooking recipes. More on that later!

This month, I'm trying the following *new* recipes:

Stuffed Pasta Shells (carried over from last month, because I never ended up making it)
Thai Coconut Soup
Quick Crustless Quiche (we love this quiche, but I've never tried to freeze it before)
Chicken Pot Pie (The Pioneer Woman's recipe, so I feel confident about this one!)

I'll let ya know how it goes. :)

Is your Monday off to a good start?

P.S. And no, I don't plan on using all 5 pounds of cheese in my cooking this month!

Linked to Menu Plan Monday.

  1. So, in your plan, you leave no spots for leftovers. Do you both eat leftovers for lunch so that there are none for dinner? I always end up with so many leftovers!!!

  2. Oh wow. This is awesome. I need to do a monthly plan NOW!

  3. the PW's chicken pot pie recipe is DELICIOUS!!! It's a new favorite at our house :-)

  4. Kathy, we do normally eat leftovers for lunch, although we sometimes do have them for dinner again. I just like to have a meal designated for each night and make sure I have the ingredients on hand...if we decide to eat leftovers instead, no problem! Also, we like to invite our neighbors over for dinner at the spur of the moment, which often means no leftovers. :)

Amanda, I loooove having a monthly. It saves so much time.

Sarah, good to know! I'm looking forward to trying it.

  5. Looks like a great plan. My kids love cheese so 5 lbs of cheese would be gone! :)

  6. Oooh, crustless quiche sounds good! Thanks for posting the recipe :-)

  7. Alicia we misssssssed you!!!!!! You have inspired me to create monthly meal plan! I will try it for March. I actually made the AR Thai and it was super duper yummy, just too spicy for the kids. I would love to see more posts and photos from Blissdom. Oh! I also changed my blog up, take a peek! I'm stoked :)
    xo Marissa

  8. In honor of you, we're having Friday night pizza. :) I didn't do another freezer cooking month - forgot to plan it out. Maybe I should give it a go next week.

  9. Alicia, I did my FIRST freezer cooking day last Saturday (thanks to your inspiration!) and I'm loving having some meals already prepped to cut down on the evening craziness!!!

Look what I found last week. She's got some freezer meals on there that I haven't seen before! Maybe you'll like too?

  10. Lisa, thanks for that link! Might have to try that Rigatoni with Sausage recipe. :D

Here's the link again, because the one you posted is missing the last bit: Rigatoni with Sausage and Peppers Freezer Meal

  11. Was so sorry to hear about your grandfather. I admire you. You have been through a lot in the past few weeks and you seem to be going as strong as ever. You are a real trooper! You have so many great tips but I will have to say your meal planning is awesome!
