Baked Shrimp Over Pasta

Baked Shrimp with Pasta

It was one of those nights where 1) I hadn't made my menu plan yet {horror!} and 2) it was getting precariously close to dinner time. I had shrimp in the freezer....pasta in the cabinet...ah-ha! I pulled out my Mexico Beach Seafood Cookbook, and with a little improvisation, this is what happened for dinner.

The idea is simple--bake up some shrimp in butter, and serve over pasta. Simple and rich. 

Please excuse the butter. Due to it's copious presence, I wouldn't eat this meal every other night. But every once in a while? Delightful!

Shrimp Baked in Butter (March 11)
Baked Shrimp over Pasta
Adapted from the Mexico Beach Artificial Reef Association Seafood Cookbook
Serves Four

Ingredients
1/2 cup butter, melted
2 TBSP chicken broth
2 TBSP fresh parsley
1 TBSP lemon juice
3 cloves garlic, minced
1 tsp. dried basil
1/2 tsp. Worcestershire sauce
1/2 tsp. Tobasco sauce
1 lb. shrimp, peeled and deveined.
Cooked pasta

Mix together all ingredients (except shrimp) in a baking dish. Then add the shrimp, stirring to coat. Bake at 450 degrees for 15 minutes.

Serve over pasta and sprinkle with parmesan cheese. Garlic bread and veggies would make a looooovely sides. :)

  4. Pretty good for a no menu plan thrown together dinner. We usually end up eating cereal or canned soup when that happens at our house.

  5. Shrimp wig pasta is my favorite! And adding garlic just makes it better! However, I sadly can't eat too much shrimp or it makes me a bit sick. :( It's gotten worse as I've gotten older, so I'm afraid I've formed a slight allergy to it. But shrimp occasionally seems to be just fine (whew).

    Hi! I found your blog/recipe today and am actually making this tonight! Curious as to whether or not you bake the shrimp covered with foil or not...? Also...I warmed all the other ingredients on the stove first to melt the butter and join the flavors. We'll see what happens! :) Thanks for a tasty idea!!
