Menu Plan Monday--Feb 22

This week's menu is based of off the remaining food in my freezer, which I am working towards emptying by March 1st (my freezer cooking day!).

What's in my freezer?
Butter pecan ice cream (shouldn't be a problem "getting rid" of this! Ha!)
2 boxes frozen spinach
2 chicken breasts
chicken drumsticks
chicken thighs
2 lbs Italian sausage
1 box Texas toast
1 bag beef breakfast patties
chopped celery
peas and carrots
1 bag stir fry vegetables
1 loaf bread
1 bag broccoli

So, with this list in hand, and the help of, I have come up with the following menu for this week.

Breakfasts: cereal, biscuits with beef breakfast patties, fruit
Lunches: sandwiches (uses bread), leftovers, salad

Dinners by day of the week:
Monday: Chicken stir fry with rice (uses chicken, stir fry veggies, maybe broccoli)
Tuesday: Dinner at a friend's house
Wednesday: Cajun Chicken and Sausage Gumbo with rice--we are having company this night (uses chicken, sausage, celery)
Thursday: Spagetti with spinach, texas toast, salad (uses spinach, and obviously, texas toast)
Friday: Cheesy Chicken Pot Pie (uses chicken, peas and carrots)

I think that should do it! I work all day Saturday (hubby out of town) and Sunday will be leftover day. :)
