Time for a fresh start--a new week!! Mine is off to a nice beginning since I woke up before Little W. :)
A note about this week's menu plan: it always helps me to have a plan, but we do not always stick to it exactly! So, if you see some of my meals repeated, it's probably because we never actually got to that meal the week before. Since it's just the three of us, we have the flexibility to change plans easily--some night we eat with my parents or with friends. We typically eat with my parents on the evenings where I was at work (my mom keeps Little W.).
This week
Breakfasts: cereal, toast with jam, hot tea, stuffed pancake cupcakes (we need to finish these!!)
Lunchs: leftovers, sandwiches, salads, fruit
Dinners:
Monday--Easy Taco Bake (Andrew eats at men's mtg), broccoli
Tuesday--Black bean wraps
Wednesday--Sloppy joes, mashed potatoes
Thursday--This might be my freezer cooking day for April, in which case we probably have something simple, like Beef and Lentil Stew and bread.
Friday--Pizza night
I have a few experiments I'd like to try in the kitchen this week, including homemade bisquick and some honey whole wheat bread (using a recipe a friend used and loved). Not sure what I'll get to, though, since I need to do prep for next month's cooking day and I'm working early in the week instead of later in the week. We'll see.
