"Awesome with Awesome-Sauce"

It was with this auspicious title that I was introduced to one of my new favorite soups/stews. Made with sausage, black beans, tomatoes, corn, and cilantro (love the flavor this brings in!), this stew was created by my friend Marlo, and her husband dubbed it "awesome with awesome-sauce."

I sat down with her and had her give me the details on how she makes the stew and wrote it down. This flavorful stew freezes VERY well and it is very hearty.
"Awesome" Stew
I beleive this recipe would serve around 4 people. I double or triple the recipe. Tripled and served over yellow rice it can serve a LOT of people. :)

1 28 oz can diced tomatoes, drained
2 15 oz cans black beans, drained
1 cup frozen white corn
1 lb sausage (you can use italian, beef, or turkey sausage...and I like it spicy!)
2 small yellow onions, chopped
Fresh cilantro to taste
Garlic to taste
Tony's seasoning to taste

In a large pot, saute the onions in olive oil. Then add the garlic and sausage and cook until sausage is cooked through. Then add the rest of the ingredients, seasoning to taste. Let simmer for approx 1 hour. Serve over yellow rice.

  2. Melinda, Tony's Chachere's is a creole seasoning (that doesn't have MSG!). :)
