Cobbler-y Blueberry Pie
Here are the ingredients that you will need:
3 cups fresh (or frozen) blueberries
1 (9 inch) deep dish pie crust (I made my own, but pre-made would works too!)
1 cup white sugar
1/3 cup all-purpose flour
1/8 tsp salt
2 eggs, beaten
1/2 cup sour cream (I used reduced fat)
1/2 tsp. vanilla
1/2 cup white sugar
1/2 cup all-purpose flour
1/4 cup butter
First, mix together 1 cup sugar, 1/3 cup flour, and salt.
Beat your eggs, and add them to your dry mixture, along with the sour cream and vanilla (I did 1/2 tsp vanilla, but next time I'll up it to 1 tsp.) and mix together.
Put your blueberries into the uncooked pie crust (aren't they pretty?) and pour the wet mixture over them.
Like so...
Beautiful.
In a separate bowl, mix together 1/2 cup flour and 1/2 cup white sugar. Add a pinch of cinnamon if you want. Then cut the butter into the mixture using a pastry cutter (or 2 knives) until the mixture looks like coarse crumbles.
Then sprinkle it over your pie.
Bake at 350 degrees for 50-55 minutes, or until golden.
I love blueberry season.

ReplyDeleteOh wow, this looks SO good. We picked blueberries this year, too, and I have a bunch in the freezer. I'll have to make this... maybe for a Saturday breakfast :)
